Chilli Jam Coconut Beef Noodle Stir Fry

Ingredients

  • 3 pkt AYAM™ Rice Noodle Nests

  • 270ml can AYAM™ Coconut Milk

  • 2-3 tbsp vegetable oil

  • 400g beef stir fry strips

  • 1 small onion, thinly sliced

  • 2 medium carrots, thinly sliced

  • 1 bunch broccolini, chopped

  • 1/3 cup AYAM™ Thai Chilli Jam Paste, or to taste

  • 1 tbsp AYAM™ Fish Sauce, or to taste

  • 2 limes, 1 juiced, 1 cut in wedges

  • 1 tsp brown sugar (optional)

  • Roasted cashews, coarsely chopped, to garnish

 

Method

  1.  Put noodles in a heat proof bowl, cover with boiling water and stand 5 minutes or until softened, stirring occasionally to separate noodles. Drain and set aside.
  2. Meanwhile, heat pan on high heat, add 1 tablespoon oil and stir fry beef in batches until just cooked. Remove to a plate.
  3. Add 1 tablespoon oil to pan, add onion and cook 2 minutes, stirring occasionally.
  4. Add carrot and broccolini, chilli jam and fish sauce and cook 3 minutes.
  5. Add beef, coconut milk, noodles, lime juice and sugar (optional), stir and heat through.
  6. Serve garnished with cashews and lime wedges.
Tips: Beef could be substituted with chicken stir fry strips or diced tofu. Add other vegetables (eg. broccoli, bamboo shoots, snow peas, green beans) and herbs (eg. Thai basil, coriander).
