Prawn and Noodle Salad with Coconut Dressing
Ingredients
- 200g AYAM™ Rice Noodles
- 600g cooked medium prawns
- 1 small mango
- 1 large Lebanese cucumber
- 8 radishes
- 2 green onions
- 100g sugar snap peas
- ½ cup mint
Coconut Dressing
- 140ml AYAM™ Coconut Milk
- 1½ tbsp AYAM™ Thai Sweet Chilli
- 1½ tbsp AYAM™ Fish Sauce
- 1 tsp grated green ginger
- ⅓ cup lime juice
Method
- Prepare noodles according to packet instructions. Drain and rinse under cold water and set aside.
- Peel and devein cooked prawns.
- Peel, seed, and slice mango. Thinly slice cucumber, radishes, green onions, snap peas, and mint.
- In a large bowl, combine cooked rice noodles, prawns, and sliced salad ingredients.
- For coconut dressing, combine all ingredients in a separate bowl and whisk until well combined.
- Add dressing to salad bowl and toss to coat.
