AYAM coconut cream is THE BEST coconut cream you can buy (in my opinion). We have tried most other brands and nothing compares to Ayam coconut cream. It is the best tasting, creamiest, natural coconut cream on the market. We use it in so many ways such and tastes amazing in thai curries, indian curries, raw desserts, homemade coconut yoghurt, homemade coconut icecream etc. If you have not used this before you wont be disappointed as the quality is the best and it comes in different sizes so you can buy the amount you need.

Coconut & Chocolate Ice Cream Cake

Freeze at least 3 hrs

Ingredients

250g raspberries (fresh or frozen)
400g can condesed milk
300ml thickened cream
400ml AYAM™ Coconut Cream
⅓ cup dessicated coconut
½ cup chopped pistachio nutes
250g dark chocolate, melted and cooled

Method

Mixing:

Press a large piece of plastic wrap over the base of a spring form and up the sides.
Blend or we process the raspberries until smooth. Spread the mixture evenly over the base of the tin. Once it’s done, freeze until it becomes firm.
Next combine the condensed milk, the cream and the coconut cream in a small bowl and beat with an electric mixer for 2 minutes, until thickened.

Stirring:

Finally, stir in the desiccated coconut, the pistachios and the chocolate. Spread the mix over the raspberry layer.
Put back in the freezer until firm.
