Thai Chicken Satay Noodles

Ingredients
- 1 chicken breast, skin off, cut into thin strips
- 1 tbsp AYAM™ Satay Seasoning
- Pinch of salt
- 2 tbsp extra virgin olive oil
- 2 whole eggs
- 2 cloves garlic, chopped
- ¼ tsp ginger, chopped
- 1 tbsp AYAM™ Sambal Oelek
- 100g peanuts, chopped
- 225g AYAM™ Rice Noodles
- 1 bunch spring onions, chopped
- 1 bunch coriander, chopped
- Crispy fried onions
Sauce
- 1 tsp rice vinegar
- ¼ cup brown sugar
- ¼ cup peanut butter
- 3 tbsp AYAM™ Light Soy
- ¼ tsp AYAM™ Sesame Oil
- 1 tsp AYAM™ FIsh Sauce
- 270ml AYAM™ Coconut Milk
Method
- Cook noodles as per packet instructions. Drain and put aside.
- Whisk all sauce ingredients in a small bowl or measuring cup. Ensure that sauce is smooth and the peanut butter is mixed well with other ingredients.
- Mix eggs with sambal oelek.
- In a bowl, coat the chicken with satay seasoning, salt, and extra virgin olive oil.
- Sautee garlic and ginger in a hot pan over medium-high heat with a splash of olive oil. Add the chicken and sear for a few minutes. Push to one side, and add the eggs. Stir eggs for about a minute, then add prepared rice noodles in the pan and toss everything together.
- Pour in the sauce and toss again until well incorporated. Add the spring onions, coriander, peanuts, and crisp fried onions.
- Serve and enjoy!
