Beef and Oyster Sauce Stir Fry

Ingredients

500g beef fillet steak, sliced thin
Beef marinade -
1 tsp AYAM™ Sesame Oil

2 tbsp AYAM™ Dark Soy Sauce

2 tbsp crispy chilli oil
-
1 tbsp coconut sugar
-
1 tbsp cornflour
-
3 tbsp extra virgin olive oil
-
4 cloves garlic, coarsely chopped
-
2 inches ginger, peeled and cut into matchsticks

½ brown onion, sliced
-
1 long red chilli, sliced
-
Salt & pepper
-
50g snow peas
-
50g sugar snap peas
-
2 tbsp AYAM™ Light Soy Sauce

½ cup AYAM™ Oyster Sauce
-
1 tbsp cornflour mixed with 1-2 tbsp water to create a slurry

1 bunch coriander, roughly chopped
-
3 spring onions, sliced
-
1 bunch garlic chives, chopped
Method

Coat the beef pieces in the marinade. Leave to marinate in the fridge for a minimum of 1 hour or ideally overnight.

Add oil to a hot frypan over medium-high heat. Sweat down the garlic, ginger, onion and chilli with a pinch of salt until the onions have softened and started to develop a golden colour.

Spread the marinated beef evenly across the pan and season with salt and pepper, if you’re using a small frypan do this in batches. Sear the beef for a few minutes before adding snow peas and sugar snap peas.

Add light soy sauce, oyster sauce and cornflour slurry stir to coat the beef pieces. Add the coriander, spring onions and garlic chives, toss through for 30 seconds to wilt before serving.
