Watermelon Sago Dessert

Ingredients:
- 200g sago dessert
- 1 x 270ml coconut milk
- 2 cups chopped watermelon, chilled
- Fresh raspberries, to serve
- A few sprigs of mint, to garnish
Method
- Blend coconut milk with 1½ cups of watermelon until smooth. Fold through sago pearls.
- Distribute remaining watermelon pieces between 6 decorative glasses. Pour over the sago and watermelon mixture and garnish with raspberries.
