Stir-fried Scallops in XO Sauce

Ingredients
- 400g fresh scallops
- ¼ red onion, finely sliced
- 2 cloves garlic, finely sliced
- Small knob of gingerm finely sliced
- ½ red chilli, deseeded and finely sliced
- Salt and pepper
- ½ bok choy
- ½ cup green beans
- ½ cup snow peas
- 1 tbsp AYAM™ XO Sauce
- 1 tbsp AYAM™ Hoi Sin Sauce
- 1 tbsp AYAM™ Oyster Sauce
- 1 tbsp AYAM™ Teriyaki Sauce
- 2 cups snow pea tendrils
- ½ bunch coriander, roughly chopped
- ¼ bunch of chives, roughly chopped
Garnish
- 1 tbsp deep fried shallots
- 1 tbsp sesame seeds
Method
- Mix together the XO sauce, hoi sin, oyster, and teriyaki sauce.
- In a non-stick fry pan, heat a tablespoon of vegetable oil, and add the onion, garlic, gingern and red chillies.
- Sweat for 2-3 minutes.
- Add the scallops, and season with salt and pepper.
- Add the mixture of sauces and stir through.
- Add the snow peas tendrils, coriander, and chives. Toss in the pan for 45 seconds or just until the greens begin to soften.
- Serve and garnish with the shallots and sesame seeds.
