Fresh & Easy Chicken Satay

Ingredients
- 300g chicken thigh fillets
- ½ cup AYAM™ Satay Marinade
- 1 Lebanese cucumber, finely diced
- ⅛ pineapple, cored and finely diced
- ½ cup AYAM™ Satay Sauce
- 10 bamboo skewers
- Vegetable oil, for rolling
- salt flakes, to taste
- 2 small red chillies, very finely chopped (optional)
- Steamed Jasmine rice, for serving
Ingredients can be purchased directly as a kit on Fresh & Easy's website.
Method
- Cut chicken into thin strips.
- Mix well with satay marinade, cover, and set aside for at least 30 minutes, maximum 2 hours.
- Combine cucumber, shallot, and pineapple. Cover and set aside.
- Place satay sauce in a small saucepan and bring to a simmer. Cover and set aside to keep warm.
- Heat barbecue or char-grill pan until very hot.
- While heating, weave chicken strips onto skewers, roll in vegetable oil and sprinkle with salt.
- Grill chicken for about 2 minutes each side, until just cooked through.
- Transfer warmed satay sauce to a serving bowl, and top with as much chilli as you like.
- Serve chicken with rice, satay sauce, and pineapple salad on the side.
