Yellow Curry Potato Gem Bake

Ingredients
- 400g potato gems
- 2 tbsp AYAM™ Thai Yellow Curry Paste
- 400g AYAM™ Coconut Cream
- 200g shredded cheese (optional)
- ¼ cup spring onions, chopped
Method
- Preheat oven and cook potato gems as per packet instructions.
- While the potato gems are cooking, in a pan on medium heat, add your yellow curry paste and stir for about a minute. Add coconut cream and stir through for another 5 mins until slightly thickened.
- In s shallow baking dish, pour the yellow curry mixture and layer the cooked potato gems evenly on top once ready. Sprinkle top with shredded cheese.
- Change oven to grill option (or turn oven to 180°C) and cook cheesy potato gems for 5 minutes, or until cheese is melted and golden brown.
- Garnish with spring onions and enjoy!
