Add garlic, onion, curry leaves, ginger and extra virgin olive oil to a hot pan over a medium heat and saute for 2-3 minutes, season with salt and pepper.
Add mushrooms, xo sauce, chilli, sesame oil and soy. Add prawns and clams, cover with a lid and cook for 3-4 minutes.
Stir through spring onions, garlic chives, coriander and pea shoots.
