Matcha Banana Bread

Ingredients
- 3 tbsp matcha powder
- 2 very ripe bananas
- 1¼ cup gluten-free flour blend
- ¾ cup almond flour
- 1 tbsp baking soda
- 2 large eggs
- 1 teaspoon vanilla
- ½ cup melted AYAM™ Coconut Oil
- ¼ cup coconut sugar
- Pinch salt
Method
- Preheat the oven to 180°C.
- Spray coconut oil into a bread loaf pan. In a mixer, add all wet ingredients and mix. Slowly add in dry ingredients a little at a time. When the dry ingredients are mixed, increase the speed to medium for one minute. Pour the batter into the loaf pan and bake 25-30 minutes until done.
Serving suggestion:
Dollop of Greek yogurt or ricotta and honey.
