Huli Huli Chicken

Ingredients
Chicken

¼ cup extra virgin olive oil

1 whole chicken, butterflied

Salt & pepper

Lime, to serve
Glaze
-
1 clove garlic
-
1-inch ginger
-
¼ cup black vinegar
-
1 tbsp Worcestershire sauce
-
¼ cup honey
-
¼ cup brown sugar
-
1 cup crushed pineapple
-
¼ cup tomato sauce
-
3 tbsp AYAM™ Light Soy Sauce

½ tsp AYAM™ Sesame Oil
Hawaiian Salsa
-
⅓ pineapple, diced
-
1 orange, peel removed and diced
-
4 baby cucumbers, diced
-
3 spring onions, diced sliced
-
1 tsp AYAM™ Light Soy Sauce
-
2-3 drops AYAM™ Sesame Oil
-
1 red chilli, diced
-
1 green chilli, diced
-
½ bunch coriander, diced
-
Salt & pepper
-
1 tbsp extra virgin olive oil
Method
- Preheat the oven to 180°C.
- Score the chicken breast and thighs, place in a lined baking tray breast side up. Season with salt, pepper and olive oil.
- Combine all of the ingredients for the glaze. Pour the glaze over the chicken. Cook in the oven for 55-60 minutes or until the chicken is cooked.

Combine all of the ingredients for the salsa and stir together.

Transfer the chicken to a serving plate, top with salsa and squeeze over lime juice to serve.
