Easy Sour & Spicy Potato Balls

Ingredients:
- 600g cooked potato
- 120g corn flour
- 100g garlic, chopped
- 80g dried chilli flakes
- 50g red long chilli, sliced
- ½ bunch spring onion, sliced
- 60g white sesame seeds
- 200ml extra virgin olive oil
- 75ml black vinegar
- 100ml light soy sauce
- 50g caster sugar
- 100ml oyster sauce
Method
- Mash the potato thoroughly before adding the corn flour. Shape the potato dough into small balls and allow to rest for at least 1 hour in the fridge.
- In a large pot of boiling water cook the potato balls until firm before chilling them down in ice water and then drain off.
- In a large metal bowl, add your garlic, spring onion, chilli, dried chilli and sesame seeds and then cover with your hot olive oil.
- Once cooled a little, add your vinegar, soy sauce, sugar and oyster sauce and give a good mix before adding your cooked potato balls.
