Combine flour, sugar, coconut milk, water and egg in a food processor and blend for a few seconds until smooth. Pour into a jug, stir in dessicated coconut.
Heat a non-stick frying pan to medium-low, spray with oil. Pour around 2 tablespoons of mixture into the pan, and cook for 1-2 minutes on each side or until golden brown.
Repeat with remaining mixture, spraying oil in between cooking each piklet.
