Coconut Piklets

Ingredients

  • 1 cup self-raising flour
  • ⅓ cup caster sugar
  • 140ml AYAM™ Coconut Milk
  • ¼ cup water
  • 1 egg
  • 1 tbsp dessicated coconut
  • Oil spray
  • 1 jar (200ml) AYAM™ Palm Sugar
 

Method

  1. Combine flour, sugar, coconut milk, water and egg in a food processor and blend for a few seconds until smooth. Pour into a jug, stir in dessicated coconut.
  2. Heat a non-stick frying pan to medium-low, spray with oil. Pour around 2 tablespoons of mixture into the pan, and cook for 1-2 minutes on each side or until golden brown.
  3. Repeat with remaining mixture, spraying oil in between cooking each piklet.
  4. Serve warm with Palm Sugar Syrup.
