Thai Yellow Curry Chicken Wings

Ingredients
- 1 kg chicken wings
- 2 tbsp AYAM™ Thai Yellow Curry Paste
- 1 long red chilli, roughly chopped (optional)
- 1 knob ginger, peeled and finely chopped
- 3 shallots or onion, chopped
- 3 garlic cloves, roughly chopped
- 1 bunch coriander, roughly chopped
- 2-3 spring onions, sliced
- Extra virgin olive oil
- Salt and pepper, to taste
Method
- In a large bowl, coat the chicken wings with curry paste, chilli ginger, shallot, coriander, spring onion and a splash of olive oil. Season with salt and pepper.
- Cover and place in the fridge to marinade for an hour, or ideally overnight.
- Preheat the oven to 200°C.
- Bake wings for at least 25 minutes, until cooked through.
- Top with chopped greens, and serve.
