Thai Curry Prawn Sandwich

Ingredients
- 500g prawns, shells removed and deveined
- 1½ tbsp cornflour
- ¼ cup breadcrumbs
- 1 egg
- 1 tbsp AYAM™ Thai Yellow Curry Paste
- 3 spring onions, roughly chopped
- 1 tsp AYAM™ Fish Sauce
- Vegetable oil, for frying
- Baby cos lettuce leaves
- Coriander, to serve
- 1 lime, juiced
- 4 soft long bread rolls, halved lengthways
- Mayonnaise, to serve
- AYAM™ Thai Sweet Chilli Sauce, to serve
Method
- In a food processor pulse the prawns, cornflour, breadcrumbs, egg, curry paste, spring onions, and fish sauce until it becomes a paste-like consistency.
- In a large non-stick frying pan, heat the oil on medium heat. Using wet hands, shape the prawn mince into patties and carefully place onto the heated pan.
- Fry for 1-2 minutes on both sides until lightly golden brown.
- Drain cooked patties onto a plate with paper towel and season with lime juice and salt. Set aside.
- To assemble, spread mayonnaise and sweet chilli sauce on both sides of the roll. Add prawn patties, lettuce, coriander and sandwich together to serve.
