Satay Salmon with Pineapple Salsa

Ingredients
- 3 fillets salmon, skin and bones removed, cut into thick cubes
Salmon marinade
- 1 tsp AYAM™ Satay Seasoning
- Pinch chilli flakes
- ½ tsp sesame seeds
- Pinch salt
- Black pepper
- 1 tbsp extra virgin olive oil
- 2 x AYAM™ Gado Gado Peanut Sauce 250mL
Pineapple Salsa
- ½ white onion, diced
- ¼ pineapple, diced
- 1 spring onion, finely sliced
- 1 tbsp sesame seeds
- 1 long red chilli
- 1 lemon, juice
- 1 tbsp extra virgin olive oil
- Pinch salt
- Black pepper
- Pinch chilli flakes
Method
- Coat the salmon pieces in all of the marinade ingredients, set aside for 10 minutes.
- In the meantime combine all of the ingredients for the salsa in a bowl.
- Pour the gado gado sauce into a pot and gently heat.

Place the salmon on skewers, about 3 pieces per skewer, and cook on a hot grill pan, 4-5 minutes on each side.

Serve with the salsa and gado gado.
