Creamy Rice & Mango

Ingredients
- ½ cup short grain rice
- ½ cup castor sugar
- 4 cups water
- 2 mangoes, sliced
- 200ml AYAM™ Coconut Milk
- ½ cup shredded coconut to serve
- Corn to serve (optional)
Method
- Preheat oven to 190ºC.
- Spread the shredded coconut evenly over the baking tray and place in oven to toast for 10 min.
- Add rice, sugar and water and mix well.
- Simmer for 15 to 20 minutes, until the water is absorbed.
- Pour in coconut milk and stir.
- Arrange mango slices on the side of plate.
- Spoon 4 tbsp of sticky rice onto plate.
- Sprinkle shredded coconut on top of rice.
- Sprinkle few pieces of corn if desired.
