Coconut Milk Bircher Muesli

Ingredients:
- ¼ cup rolled or steel-cut oats
- 1 x 65ml coconut milk
- ½ tbsp almonds or hazelnuts (or any nut), chopped
- 1 tsp pepitas
- 1 tsp hemp seeds
- 1 date, chopped
- 2 strawberries, sliced
- ¼ cup blueberries
- Water or pineapple juice
- Mint, as garnish
Method
- In a bowl combine the oats, coconut milk, nuts, seeds, dates and a drizzle of water or pineapple juice. Cover and leave in the fridge overnight to soak.
- In the morning stir and top with the berries, then garnish with chopped fresh mint. Eat!
