Massaman Beef Stir Fry
Ingredients
- 2 tbsp AYAM™ coconut oil
- ½ onion, diced
- 1 garlic clove, crushed
- 1 tbsp ginger, freshly grated
- 400g rump steak, cut into thick strips
- ⅓ cup AYAM™ Massaman curry paste
- 1 red capsicum, roughly chopped
- 1 cup snow peas, cut in half
- About 4 large kale leaves, shredded, stems removed
- 1 bunch coriander, chopped finely
- ¼ cup dry roasted cashews, chopped
Method
- Heat coconut oil in a frying pan/wok over high heat, add onion to the pan cook for 2-3 minutes, then add garlic and ginger, stir-fry for 1-2 minutes then add the beef strips and mix everything together.
- Add curry paste and stir, ensuring everything is coated. Fry it off a bit to make fragrant (about 1-2 minutes). Add the snow peas and capsicum and toss well, then throw in the kale and coriander and toss again. Add the cashews and mix once more before serving.
