Pipis in XO Sauce

Recipe by Justine Schofield

Serves 4 pers | Prep 5 minutes | pot 10 minutes
 

Ingredients:

  • ½ tbsp vegetable oil
  • 1kg pipis
  • 2 tbsp AYAM™ XO Sauce
  • 1 tbsp AYAM™ Oyster Sauce
  • 1 tbsp AYAM™ Sesame Oil
  • 1 tbsp cornflour
  • ½ cup cold water
  • 200g AYAM™ Vermicelli Noodles
  • Spring onions to garnish

 

Method:

  1. Heat the vegetable oil in a wok or non-stick fry pan over medium-high heat.
  2. Add the pipis, XO Sauce and Oyster Sauce and stir-fry for 2 minutes or until the pipis open.
  3. In a bowl, add cornflour and cold water and stir to combine.
  4. Add mixture to pan and stir to thicken sauce.
  5. Add Sesame Oil and stir-fryfor 30 minutes.
  6. Garnish with spring onions.
  7. Serve with blanched Vermicelli noodles or steamed rice.

Tip: Substitute pipis for claims if they ar enot unavailable.
