Katsu Sauce

Recipe by Michael Weldon

Serves 4 pers | Prep 25 minutes | pot 15 minutes
 
 

Ingredients:

  • 1kg chicken thigh
  • Salt and pepper, to taste
  • 100g plain flour
  • 2 eggs, lightly beaten
  • 200g panko breadcrumbs
  • 250g cabbage, shredded
  • 4 lemon wedges
  • 5 tbsp AYAM™ Katsu Sauce
  • Oil, for frying
  • Steamed rice

 

Method:

  1. Tenderize chicken thigh by pounding them to even thickness, season both sides with salt and pepper.
  2. Dredge the chicken thigh in flour, beaten eggs, and coat with panko breadcrumbs.
  3. Carefully place the breaded katsu into hot oil to fry.
  4. Once cooked, remove katsu, and place on wire rack to drain excess oil.
  5. Slice katsu and serve with steamed rice, sliced cabbage, and lemon wedge.
  6. Serve with sauce for katsu on the side.

Tips: Substitute crab for prawns or other seafood.
