AYAM GCBC9 Ep06 Massaman-Beef-Stir-Fry


Serves 2-4
Time 20 minutes


2 tbsp AYAM™ coconut oil
½ onion, diced
1 garlic clove, crushed
1 tbsp ginger, freshly grated
400g rump steak, cut into thick strips
⅓ cup AYAM™ Massaman curry paste
1 red capsicum, roughly chopped
1 cup snow peas, cut in half
About 4 large kale leaves, shredded, stems removed
1 bunch coriander, chopped finely
¼ cup dry roasted cashews, chopped


  • Heat coconut oil in a frying pan/wok over high heat, add onion to the pan cook for 2-3 minutes, then add garlic and ginger, stir-fry for 1-2 minutes then add the beef strips and mix everything together.
  • Add curry paste and stir, ensuring everything is coated. Fry it off a bit to make fragrant (about 1-2 minutes). Add the snow peas and capsicum and toss well, then throw in the kale and coriander and toss again. Add the cashews and mix once more before serving.
