quinoa pooridge

Serves 4

Ingredients

500ml water
90g quinoa
270ml AYAM™ Coconut Milk
1 tbsp brown sugar
35g dried fruit (apricot, cranberries, blueberries, raisins or goji berries)
15g walnuts honey, to taste 

Method

  1. In a medium saucepan, combine water and quinoa. Bring to boil.
  2. Reduce heat to a simmer and cook for 15 minutes until liquid has been absorbed.
  3. Stir in coconut milk and sugar, then cook it to a creamy consistency
  4. Serve into bowls and top with dried fruit, walnuts and honey
