Celebrate Christmas with AYAM™

 The Christmas holidays are fast approaching, and that can only mean one thing: Food, glorious food. 

In typical AYAM™ fashion, we’ll give you more excuses to eat 'till your pants pop this festive season! Gather your family and friends and put together the most scrumptious, lip-smacking Christmas party yet with these delicious recipes.

 

  
 
 

ASIAN-STYLE PRAWN COLESLAW WITH LIME COCONUT DRESSING

Balance out all the Christmas protein with this simple, yet delicious coleslaw salad infused with a tantalising lime coconut dressing. 

Recipe: Adrian Richardson and Zoe Bingley-Pullin (Good Chef Bad Chef)
Serves: 4 
Time to prepare: 5 min

INGREDIENTS
Prawn and Coleslaw
400g prawns, peeled and cooked, tails on
1 spanish onion, finely chopped
1 cup chinese cabbage, finely sliced
1 cup kale, stems removed, roughly chopped
1 cup carrot, julienne
1 bunch of coriander with stem, roughly chopped
1 bunch of mint, stems removed, roughly chopped
2 tsps. ginger, grated

Coconut, Coriander and Lime Dressing

1 x270ml can AYAM™ Coconut Milk
1 tsp. honey
1 red chilli, finely chopped
2 tbsp. lime juice
1 tsp. lime zest
1 tbsp. AYAM™ Fish Sauce

METHOD
1. In a large bowl, mix together all of the salad ingredients and prawns. In a jar or small bowl, mix the dressing ingredients and shake well. Mix the two together and serve on a large platter.

 

 
 


THAI CHILLI JAM CHICKEN DRUMSTICKS

Finger lickin’ good with an Asian twist, these chicken drumsticks marry beautifully with our Thai Chilli Jam marinade and will leave your guests wanting more. 

Recipe: Justine Schofield (Everyday Gourmet) 
Serves: 4
Time to prepare: 45 min

INGREDIENTS
8 chicken drumsticks
Marinade
1 tbs. AYAM™ Thai Chilli Jam Paste
1 tbs. AYAM™ Light Soy Sauce
1 tbs. brown sugar
½ tbs. rice wine vinegar
½ small red cabbage, finely shredded
1 carrot, grated
½ Spanish onion, finely sliced

Dressing
2 tbs. rice wine vinegar
2 tbs. AYAM™ Light Soy Sauce
4 drops. AYAM™ Sesame Oil

4 tbs. vegetable oil
1 tsp. finely minced ginger  

METHOD
1. Pre heat the oven to 160C. Line a large tray with baking paper and place a rack on top.

2. In a bowl mix the chilli jam with the soya, sugar vinegar. Make several slits in the chicken and then coat in the chilli jam marinade. Place on the rack, removing excess marinade and bake in the oven for 30 minutes. Baste and turn the chicken every 6-8 minutes.

3. Combine dressing ingredient in a jar and give it a good shake to combine. Pour over the cabbage, carrot and onion. Serve with the chicken drumsticks.  

 
 



PALEO CHOCOLATE CAKE

Indulge in this delectable chocolate cake, which has everything you need to cap off the sweetest Aussie Christmas. Did we mention it’s also dairy and gluten free?  

Recipe: Adrian Richardson and Zoe Bingley-Pullin (Good Chef Bad Chef)
Serves: 6+ 
Preparation time: 60 min

INGREDIENTS
Cake Ingredients
¾ cup raw cacao powder
½ cup coconut flour
3 cup almond flour
½ cup raw coconut palm sugar
2 tsp. baking soda
1 tsp. sea salt
½ cup AYAM™ Virgin Coconut Oil, melted
1 cup AYAM™ Coconut Milk
3 large eggs, room temperature
2 tsp. vanilla extract
2 tbsp. raw honey

Chocolate Frosting
6 tbsp. AYAM™ Coconut Milk
1 cup gluten free, dairy free chocolate
½ cup fresh raspberries

METHOD
1. Preheat the oven at 180C. Grease the bottom and sides of a 15cm spring-form round tin, with coconut oil and line the bottom with parchment paper. In a large bowl mix together the almond flour, coconut flour, raw cacao powder, raw coconut palm sugar, baking soda and salt.
 
2. In a separate bowl whisk together the coconut oil, coconut milk, eggs, vanilla and honey. Gently fold together the two bowls and pour into the cake tin. Cook for approximately 35-45 minutes, test with a toothpick, it should come out clean.

3. For the icing melt the chocolate chips in a bowl over simmering water, water bath.  Mix coconut milk with melted chocolate until all is combined and smooth. Spread the chocolate frosting over the top and sides of the cake and sprinkle top with raspberries.
