Apricot and Honey Coconut balls
If you know you’ll leave Easter dessert to the last minute, don’t fret, because we’ve got a sweet and creamy solution to your problems!
All you need is 15 minutes and you’ll have fruity Apricot and Honey Coconut treats ready to serve to all your dessert loving family and friends, or maybe even the friendly Easter bunny hiding in your garden!
Prep: 15 mins + chilling
1 cup dried apricots
2 tbsp honey, warmed ¼ cup AYAM™ Coconut Cream Light
25g butter, melted
½ cup shredded coconut, plus 1 cup extra to coat
Place apricots, honey, coconut cream, butter and coconut in a food processor. Pulse until mixture comes together. Transfer mixture to a bowl and chill for 30 minutes until firm.
Using damp hands, roll mixture into 20 balls. Roll balls in extra coconut to coat. Transfer to a plate and chill for 15 minutes until firm.
